Recipe from Johnson Ferry Women’s Charming Celebrations Cookbook
Cookies
1 cup butter
1/2 cup sugar, plus 2 tbsp
2 1/4 cups all-purpose flour
Dash of salt
1 cup seedless raspberry jam
Icing
1 cup confectioner’s sugar
3 tsp water
2 tsp almond flavoring
Mix butter, sugar, flour and salt together. Roll into 1 inch balls and place on cookie sheet. Press down making thumbprint indention in the center. Bake at 350 degrees for 10 to 12 minutes. after removing from the oven, immediately fill with thumbprint indention with jam. While cookies are cooling, mix together icing ingredients. Once cooled, drizzle with icing.
Tips…. Cookies hold their shape better if you refrigerate them after you have formed them on your cookie sheets. If you do this, baking time will need to be slightly increased.
